Kefir Starter Cultures: Freeze-Dried for Homemade Mild Milk Kefir
These mild milk kefir starter cultures are a convenient, freeze-dried blend for making delicious, creamy homemade kefir. Unlike yogurt which is fermented by lactic bacteria alone, kefir contains a unique combination of lactic bacteria and yeast, resulting in a slightly effervescent, mildly tangy flavor.
The starter culture is a pure, laboratory-grown blend, free from additives, maltodextrin, gluten, and GMOs, making it suitable for vegetarians and SCD diets. Just add it to fresh, whole milk and incubate to produce thick, creamy kefir with a very mild taste.
The activation process begins when the cultures are first added to milk, before interacting with environmental microorganisms. This ensures the resulting kefir is well-suited for all. After a few recultivations, small kefir grains will gradually form and grow.
This kefir starter works best with whole dairy or soy milk that is free from preservatives and additives. One sachet makes approximately 1 liter (1 US quart) of kefir. The starter can then be recultured many times from just a few spoonfuls of the initial batch.
Available in convenient packs of 3, 5, or 12 sachets, these freeze-dried cultures are ideal for beginners, testing, or building up a year's supply (recultivating 4 times per month).
Simple Step-by-Step Kefir Instructions: 1. Heat 1 liter of whole milk to 40-45°C (104-113°F), then cool to slightly warm. 2. Stir in the starter culture and let sit for 15-30 minutes. 3. Transfer to sterilized jars and incubate: - Using a yogurt maker at 40-45°C for 12-16 hours for a yogurt-like texture. - At room temperature, wrapped in a towel, for 24-48 hours for a more liquid kefir. 4. Refrigerate for 3-6 hours before enjoying. 5. Recultivate by adding 3 tablespoons of the finished kefir to fresh milk.
For a thinner consistency, simply stir or shake the kefir before or after refrigeration.
