The syrup is made from 100% Grade A Maple Syrup. It's important to note that all maple sugar has a consistency similar to brown sugar, with small soft lumps that can be easily crumbled with light pressure. This is due to the required residual moisture; over-dried maple sugar forms hard clumps and should be avoided.
No chemical, organic herbicide, or pesticides are used in the production of this sugar. The plastic jugs are 100% BPA-free and sealed for safety. The product contains no artificial flavors, preservatives, or dyes, and is gluten and dairy-free.

The company uses the new International Grading System that took effect in April 2015. All of the syrup they sell is Grade-A, with the sub-grades varying based on weather, trees, and the individual season. They ship Grade-A Golden Delicate Taste, Amber Rich, Dark Robust, and Very Dark Strong, but do not sell the new Grade-B Commercial (formerly Grade-C) syrup. Darker syrups have a stronger maple flavor than lighter ones, but both are equally sweet, comprising 67% natural sugar and 33% water. The choice comes down to personal taste preference.
In addition to their core maple syrup product, the company also offers maple sugar, cream, and candy. The maple sugar is a great replacement for white sugar, providing an unprocessed sweetener with a subtle maple flavor. The maple cream is the syrup boiled down further and churned into a rich, peanut butter-like spread. The maple sap is collected by tapping both hard (sugar) and soft (red) maple trees across four properties, typically in January or February, depending on winter temperature forecasts. Tubing is set up throughout the woods, connecting all maple trees to a vacuum pump that helps pull the sap from the trees. The clear, water-like sap can range from 1-3% sugar content.
The collected sap is run through a reverse osmosis (RO) system to increase the sugar content before being pumped into the evaporator. This makes the boiling process more efficient, and a steam recovery system is also used to save fuel oil. The syrup is ready to be 'drawn off' the evaporator and pumped through a filter press when it reaches 67% sugar. It is then either bottled immediately or pumped into food-grade barrels for future use.
The bottling process involves heating the maple syrup to a high temperature (160-180 degrees) to eliminate any bacteria growth. During this step, the syrup is filtered one last time before being sealed and sent to customers.
Throughout the rest of the year, the company uses the stored syrup in barrels to make their other products: sugar, cream, and candy. Each item has its own unique process that results in delicious final products.
Nova Maple Syrup was established in 2015 with the purchase of a 100-acre property in Hartstown, Pennsylvania. The inaugural commercial syrup season began in late January 2016 with roughly 7,500 taps, and the business has since expanded to 22,500 taps covering 275 acres.
The company's roots trace back to a hobby that started in 2013 on 1.5 acres, where the founders tapped 50 trees and hung plastic bags to collect the sap, yielding 17 gallons of maple syrup at the end of the season. The 2019 season saw a remarkable increase, with over 5,000 gallons of syrup produced.
The family behind the business, Jake and Hailee Leveto, gave away glass bottles of maple syrup at their wedding in 2014. The company is named after their dog, Nova, a golden retriever/German shepherd mix. Since turning their hobby into a business, they have also had two sons, born in 2017 and 2019.
