Nova Maple Syrup is a family-produced product hailing from Northwest Pennsylvania, sustainably harvested from our own hardwood forests. This syrup is free from any chemical, organic herbicide, or pesticide. The plastic jug used for packaging is 100% BPA-free and sealed for safety. Moreover, it contains no artificial flavors, preservatives, or dyes, making it gluten and dairy-free.

Nova Maple Syrup utilizes the new International Grading System that took effect in April 2015. All the syrup we sell is Grade A, though the sub-grades may vary based on the weather, trees, and individual season. We ship Grade A Golden Delicate Taste, Amber Rich, Dark Robust, and Very Dark Strong, while refraining from the new Grade B Commercial (formerly Grade C) syrup.
Darker syrups possess a stronger maple flavor compared to lighter-colored maple syrups, but they are in no way inferior. Both are equally sweet, comprising 67% all-natural sugar and 33% water. The choice ultimately comes down to personal taste preference.
In addition to our maple syrup, our product line includes maple sugar, a great substitute for white sugar, and our maple cream - a rich spread with a consistency akin to natural peanut butter, made by boiling down our syrup and churning it. We also offer melt-in-your-mouth maple candies, a top-seller during the holidays that are sure to delight any sweet tooth.
Our syrup production process begins in January or February, depending on winter temperature forecasts, by tapping both hard (sugar) and soft (red) maple trees across four properties. A vacuum pump-powered tubing system helps draw sap from the trees. The collected sap, which is clear and water-like with a 1-3% sugar content, is then run through a reverse osmosis system to increase the sugar content before being pumped into our evaporator.
The syrup is ready for 'drawing off' the evaporator and filtering when it reaches 67% sugar. It is then bottled at a high temperature (160-180 degrees) to eliminate any bacteria growth, undergoing one final filtration before being sealed and shipped to customers.
This family-owned business venture started as a hobby in 2013, gradually expanding to its current scale of 22,500 taps across 275 acres. Today, we are proud to offer our customers the very best in pure, natural maple products.
